This is one of the ramekins of cheese that I made. I cut the cheese into thick (8mm) slices with a sharp knife.

Hello dear friends and welcome. Today I  want to share a tasty recipe from the US magazine VegNews : it's a genuine American Classic : Roasted Tomato and Grilled Cheese Sandwich.

At the top of the page is a delicious picture of the final result, though mine didn't look quite THAT good, but it was really tasty and we all enjoyed yesterday at lunch with soup made with winter veggies from the garden.

So here is the recipe, do give it a try...

ROASTED TOMATO AND GRILLED CHEESE SANDWICH

First of all get yourself: 4 tomatoes, 3Tbsp olive oil, 1/2 tsp salt, divided, 1 tsp black pepper,

Then for the 'cheese': I cup plain almond milk*,1/2 Tbsp plus 1/2 Tbsp coconut oil, divided, 2 tsp agar powder, 1/2 cup cashews soaked for two hours, 2 Tbsp nutritional yeast, 2 Tbsp miso preferably white, 1 tsp arrowroot powder, 1 tsp apple cider vinegar, 2 Tbsp lemon juice, 1/2 tsp Dijon mustard, add a good pinch of cayenne and turmeric, 8 slices country white bread.

1. Preheat oven to 350 F (180 C). Cut tomatoes in half and place on baking sheet, drizzle with olive oil, 1 tsp salt and pepper. Roast until completely wilted, remove from oven and let cool.

2.In a saucepan over medium heat, add 'milk', 1/2 tsp coconut oil, and agar. Bring to a boil, reduce heat to low, and whisk for a few minutes.

3.In a food processor or blender, add cashews, yeast, miso, arrowroot,1/2 tsp salt, vinegar, lemon juice, mustard, spices and blend adding almond milk mixture until well combined.

4.Pour warm mixture into two small ramekins, shake down and let cool, then put in fridge for maybe an hour.

5. To make sandwiches, cut cheese into 1/4 inch (8mm) slices, place onto slice of bread, add 2 roasted tomatoes, and top with another slice of bread. Heat a cast iron skillet fo two minutes, add 1/2 Tbsp coconut oil, and let melt.

6. Add your sandwich to the pan. Allow to brown on one side, then flip it and cook the other: repeat with other sandwiches,  serve hot and share with your friends!

*Best to make your own almond milk. Commercial almond milk is only 2% almonds. In Australia its printed on the box : in the US it's not indicated.
